2008 Château Pavie mit seinem dichten, fast schwarzen Purpur bietet der Nase intensive Aromen aus Backpflaumen, Süßholz, Lakritze, Kräuterwürze, Thymian, Zigarrenkiste und Rauchfleisch. Weich mit dichter Textur wirkt die Frucht reifer, schwarzer Brombeeren stoffig im Mund. Am Gaumen breitet sie sich mit Grip intensiv aus. Hier nun zeigt sich Eleganz, die die schwarze Frucht lange im Nachhall begleitet. In 2008 ist Château Pavie ein Ausnahmewein gelungen, dessen Komplexität es in sich hat. Mit Recht monumental.

The nose is fruity, gourmand, elegant, racy and offers power as well as a beautiful finesse of the grain. It reveals notes of blackberry, violet and blue fruits associated with touches of fleshy strawberry, spices as well as small hints of gray pepper, flowers, an imperceptible hint of camphor and almond. The palate is fruity, well-balanced, silky, racy and offers a beautiful definition, a beautiful finesse, freshness, gourmandise, precision, a good structure as well as suavity. On the palate this wine expresses notes of juicy blackberry, juicy ripe raspberry, blue fruits and small notes of cassis associated with fine touches of violet / cornflower as well as touches of liquorice and chocolate. Tannins are fine and a bit dry. Good length. An imperceptible hint of cocoa and grilled oak / coffee on the finish."

A slightly more compact style of Pavie in this vintage, but still full-bodied, the 2008 has a youthful, dense purple color and is seriously endowed with concentrated, rich fruit, licorice, graphite, forest floor, and loads of dark plum and black and red currant fruit. This wine still has some tannins to resolve, and should be cellared for another 4-5 years. Drink over the following two decades. Published: Aug 28, 2015

2004 Château Pavie beeindruckt im Glas mit seinem dunklen, dichten Purpur. Der Nase bietet er komplexe Aromenvielfalt aus Cassis, Vanille und Lakritze, unterlegt mit Aromen von schwarzen Oliven und Rauchfleisch. Dicht wirkt die Frucht mit Druck am Gaumen, präsentes Tannin passt sich seidig an. Anhaltend mit Schmelz wirkt der Wein sehr lange nach.

A real sleeper effort from the Perse family, the 2004 Pavie has a dense, bluish purple color and a wonderful, sweet kiss of blackberry, licorice, spice box and roasted herbs. The wine is rich, deep, full-bodied and absolutely remarkable for the vintage. This is certainly a candidate for one of the wines of the year and seems still relatively youthful and promising. Drink it over the next 20 years.
Pavie is widely acclaimed as one of Bordeaux’s greatest terroirs, of largely limestone and clay soils. Brilliantly situated with a sunny, southern exposure and exceptional drainage, Pavie potentially rivals nearby Ausone, the oldest and possibly the most famous estate in Bordeaux. Pavie’s other nearby neighbors include, Pavie-Macquin and Troplong-Mondot to the north, Larcis-Ducasse to the southeast and La Gaffelière and Saint-Georges Côte Pavie to the west. Until 1978, previous owners rarely produced great wine, but of course that all changed with the acquisition of the 92-acre, single vineyard by Chantal and Gérard Perse. In short, they dramatically raised the quality. Currently, the vineyard is planted with 60% Merlot, 25% Cabernet Franc and 15% Cabernet Sauvignon, but the actual blend for each vintage tends to possess slightly higher amounts of Merlot. A perfectionist, owner Gérard Perse is flexible with the percentage of new oak, as well as how long the wine is aged in cask. Great vintages can get 100% new oak and spend up to 32 months in barrel. Lesser years are bottled after 18 months and see at least 30% less new oak. There is no fining or filtration. The resulting wine has been considered one of the superstars of Bordeaux since 1978.
